Maine Wild Blueberry Gingerbread
Description
This was the recipe for the 2005 Maine Wild Blueberry Festival Baking Competition.

Ingredients
  • 2 cups flour

  • 1 cup sugar

  • 1 teaspoon baking soda

  • 1 pinch of salt

  • 2 teaspoon ground ginger

  • 1 teaspoon ground cinnamon

  • 1 pinch nutmeg

  • 1/2 cup softened butter

  • 1 cup buttermilk

  • 1 large egg

  • 1/4 cup molasses

  • 1 1/2 cup Maine Wild Blueberries


  • Directions:
    Cream together butter and sugar. Add egg and beat until light and fluffy. Sift together flour, salt, and spices and add half of this mix to the creamed mixture. Stir together buttermilk, baking soda and molasses and add to the batter. Add the remaining dry ingredients. Then gently fold in the "flour dusted" Maine Wild Blueberries. Spread into a well buttered and lightly floured 9x13 glass baking pan. Bake at 350 degrees for 30-35 minutes until done.
